Each run of fermented hot sauce, spice blend, or preserved citrus is made in limited quantities. When a batch sells out, we do not rush a replacement. The next batch follows its own fermentation or drying schedule, so restock dates vary by product.
We buy from farms and suppliers in South Africa whenever the season allows. If a crop fails or a supplier cannot deliver, we either wait for the next harvest or pause that product. We do not quietly switch to imported produce without saying so on the product page.
Our cooking guides are tested in home kitchens with standard equipment. Your stove, oven, or grill may behave differently. Treat temperatures and timings as starting points, and adjust based on what you see and smell. We cannot guarantee the same result in every kitchen.
Fermented sauces and preserved citrus stay lively when refrigerated after opening. Spice blends keep their aroma longer in a cool, dark cupboard. The storage notes on each jar reflect our own testing, not a universal guarantee for every handling condition.
